Marble Cake

This marble cake has been in our family for many years. My mom used to make it when in a hurry or simply when we wanted to have “something sweet”. In my mind this is is the perfect coffee companion and it is good for snack/dessert in the office, as a snack in a lunchbox etc. Through the years I have made many variations of it – substituting some ingredients, serving it in variety of ways, even making it without the cocoa. It is one of those super desserts, that can be many things and yet it is simple, easy and super rewarding every time.

Ingredients

  • 5 eggs
  • 180g/ 1 cup sugar
  • 270g/ 1,5 cup flour
  • 1 tsp baking soda
  • 1 tsp citric acid powder
  • 130ml/ 3/4 cup milk
  • 100ml/ 1/2 cup olive oil
  • 1 tbsp cocoa powder
  • Vanilla extract
  • Rum flavour (optional)

Directions

  1. Preheat the oven to 160C.
  2. Add the milk and oil.
  3. Beat the eggs with the sugar until creamy and about double in size.
  4. Mix the baking soda, citric acid powder and flour and fold into the egg mixture. Don’t overmix it as you want the batter airy and fluffy.
  5. Reserve about 1 cup of the batter, when ready and add the cocoa powder to it. Mix gently, so that the cocoa dissolves.
  6. Pour the white mixture into an oiled and floured pan. I use a bundt cake pan.
  7. Pour the chocolate mixture on top of the rest in the pan.
  8. Use a toothpick/fork to make marbling pattern with the chocolate butter (do not over mix as you want different colours!).
  9. Bake at 160C for about 30 min (depending on your oven and baking pan, it may take more or less!) Use the toothpick test to see when it’s ready.
  10. Let it cool outside the oven.
  11. Run a spatula on the sides, to make the cake fall off the pan, when you are taking it out of the pan.

Enjoy with coffee/tea, fresh fruits, jam, whipped cream etc.
